The position

The AU-FOOD works on food science focuparameters and impact of production, processing and storage of relevance for the food industry and consumers. The department aims to contribute to food security and sustainability integrating novel raw materials and establishing new processes. While developments in this area are of high relevance, there are ongoing issues with process and product safety. To strengthen the translation of results obtained at lab conditions to food systems, we are specifically interested in a candidate, who has expertise in the cross-field between food microbiology and technology and strives to move safe food development forward.

The position takes a food chain perspective, addressing contamination, spoilage, and safety risks from farm level through food processing and distribution to the final food product. A particular emphasis is placed on understanding spore-formingsing on quality microorganisms. This includes heat-resistant bacterial and fungal spores, and investigations on how they enter, survive, and spread across the supply chain. With collaborators at the departments, the candidate will develop effective technological strategies as robust, evidence-based solutions to ensure food quality and safety throughout the supply chain. In agreement with current research themes at the departments, the position will involve plant-based and hybrid foods. There is a significant research need in this area, as production, processing and distribution of plant-based and hybrid foods is evolving. Development of this research area is a focal point, and the candidate’s scientific competences are expected to make a key contribution to further strengthening the research and teaching activities within the two departments. The position is aligned to the Science Team of Food Technology and collaborations with science teams of FOOD and cross departmental activities at AU are emphasized.  
You are expected to have research experience within three or more of the following areas:

  • Modelling and analysis of microbial growth and prediction in food relevant environments and storage conditions
  • Hands on experience with basic and advanced analytical techniques of microbial growth, identification and cultivation that relate to the evaluation of food quality and shelf-life
  • Molecular biology techniques and next-generation sequencing technologies is an asset
  • Up-and downstream processes applied in the food industry
  • Food processing, fermentation, food composition and chemistry in complex food matrices


Collaboration and exchange of knowledge with industry and advisory services are seen as part of the position. The successful candidate must also take part in teaching and supervision of students at BSc and MSc level.
